It’s the British-est of British-ness and a dish with no rules!… ‘Bubble and Squeak’ (in our humble opinion) is perfection in left-over-lunch form and though it can deliver as many of your five-a-day as you wish, it also serves generously on the stodge factor – perfect for soaking up your xmas alcohol over-indulgence.
So you’ve gathered all your leftovers from crimbo lunch… a bit of this, and a bit of that – but not enough to do much with… and that is where this quirky little piece of culinary genius comes in…
Simply grab some spuds (hopefully leftover too, but otherwise, peel, boil and mash), chop up your leftover veg and mix with the mashed spuds – seasoning as you see fit. We recommend a nice blob of butter melted into the spuds. Then pop your mixture in a pre-heated frying pan (with a generous blob of melted butter) and watch it Bubble… and Squeak as it goes crispy on each side.
Serve with, well – pretty much anything! Cold ham or turkey and a selection of pickles are top of the list of course, but it also pairs well with bacon or egg – so you could even have it for Boxing Day brunch!
Top tip: Honey roast your carrots and parsnips on Christmas Day to give your Bubble and Squeak an extra dimension – the combination of sweet roots, with salty spuds will take your taste buds on a tantalising Boxing Day adventure.
